Now summer can finally be felt! In my orchards, the trees now bear large dark red cherries.
Ingredients
For 4 persons:
500 g cherries
40 g sugar
1 packet of bourbon vanilla sugar
1 pinch of salt
3 eggs (size M)
20 g peeled, ground almonds
60 g flour
350 ml cream
powdered sugar for dusting
Preparation
Preheat the oven to 175°C.
Wash and remove the stems from the cherries. Beat the eggs with the sugar, bourbon vanilla sugar and salt until white and creamy. Then successively stir in the almonds, flour and cream. Grease
and lightly flour a baking dish (approx. 30x25cm). Spread the cherries in the dish and pour the egg mixture over them. Bake in the oven for 25 minutes on the middle shelf until golden brown. Once
the surface is lightly browned, place a sheet of baking paper over the pan to prevent the casserole from getting too dark. Dust with powdered sugar and garnish with mint leaves from the
garden.
